At the moment, I have Norton Internet Security and I’m thinking of upgrading to Norton 360 when Internet Security expires. Can I just type in the Activation code for the Norton 360, or do I have to remove Norton Internet Security first?

No. As Norton 360 and Norton Internet Security are different products, in order to install Norton 360, it is required to remove the previous installation of Norton Internet Security. Same would apply if you have Norton 360 installed, but you want to replace it with Norton Internet Security which would require to remove (uninstall) Norton 360 prior installing Norton Internet Security software.
